I'm having issues downloading assets

After installing and downloading assets for the first time, the list of catalogs are not updated automatically

This is a known issue, simply restart Blender and you should see them.

Can I download assets one-by-one instead of all of them up front?

Currently no, sorry. But the initial download of all our assets at 1k resolution is only about 3.5 GB.

Once a post-handler is added to Blender's Python API for drag & drop in the asset browser, we'll do this for sure :) In fact we've already made a patch for this and are waiting for the Blender developers to merge it.
