My renders always look flat no matter what I do. Is this the fix?
Pretty much the entire premise of Chapter 4. There's a lesson that lights the same chair two ways, one flat and one with intent, and the difference is almost rude.
Why does the course keep coming back to the same chair, bust, and horse statue?
That's the whole trick: same three objects, wildly different results depending on how you light them. The horse alone teaches you the gap between "menacing silhouette" and "yep, that's a horse."
Do I need Cycles for this, or can I just hide in Eevee forever?
Both get full chapters, including how each one actually calculates light under the hood. Pick whichever one your GPU is willing to forgive you for.
